Neighbors in Action: Meet Margaret
Celebrating the Good in District 5.
I want to recognize our neighbor Margaret Coppin, chair of the Liberty Wells Community Council, for organizing the effort to preserve the iconic Coachman’s Dinner & Pancake House sign. Coachman’s was a Salt Lake City staple. For generations, the restaurant and its iconic sign were a familiar sight along State Street. Margaret knew that preserving this piece of Salt Lake City history was important.
When the Sapa Group, which owns the property where the Coachman’s once stood, donated the sign, Margaret stepped in to coordinate its relocation. With help from community partners, she organized a GoFundMe and held multiple fundraisers across our district, raising enough money to move and restore the historic sign.
Margaret’s work, and the community’s response to it, show us that when neighbors come together, anything is possible.
